I am wondering if this is normal.

The center console LCD starts out relatively dim, but gradually brightens to the max manual setting. I didn't set it to Auto. I wasn't paying attention to the brightness of it throughout the time I have the car, but lately I have noticed this behavior.

Yes, it is a characteristic of LCD displays specially with colder weather. It's just the Liquid in the LCD reacting more slowly. It's inherent in LCD technology.
The colder the temperature the more dim the display will be initially until it "warms up" to normal brightness.

Solution would be to move somewhere warmer! :D

We use our Day/Night button almost daily...

My GMC truck has an Ambient Light-sensor on the Dash-pad and will automatically adjust the Brightness of the LCD Screen.

So naturally, I tried to find something about it in the Infiniti EX35 Service manual... http://www.nicoclub.com/FSM/EX/2008/INL.pdf

I didn't see anything that spoke of an automatic gradual brightening and dimming of the LCD Screen.
