Car running too Cold?

I got a Redtop Sr w/

-FMIC-CXRacing Radiator-2 Slim Line Electric Fans-New OEM Water Pump-New T-Stat

I've been having overheating problems for a while, and finally I narrowed it down to my stock temp gauge going crazy every now and then.

Since then I've installed a Water Temp Gauge, and during city driving it'll warm up to around 170 F, and if I start sliding around in a parking lot it'll hit 180+-.

Now when I hit the highway, the it drops down to 140 F and stays locked there. If I turn on the heater it'll go down to 138 F. Once I get off the highway it will gradually work its way back up.

Isn't 140 F way too cold for highway driving? The temperature is around 32 F so its definitely cold outside, but it still seems way too cold.

Ideas?

Do you have both your fans running?

Where is your aftermarket temp sensor getting the reading from? It should be close to the oem temp sensor because you want to see what the computer sees.

For my SR i had to turn 1 fan off to help it stay hot. Duel fans especially at 0 C weather will overcool the engine.

Yeah both fans run at all times. I'm getting my aftermarket temp readings off the upper radiator hose w/ an adapter. I considered turning the fans off, but aren't they mostly useless anyways during highway driving?

If 140 F is normal though, guess I have nothing to worry about.
