The EGR sends exhaust gas in to the intake. Since exhaust gas doesn't burn, it dilutes the air/fuel. This is done on purpose, for various reasons, however, you don't want EGR flow at idle, because it will interfere and cause the idle to drop. Too much flow and it will cause the engine to stall.
When you step on the accelarator you add more air/fuel, so this stops it from stalling. Also, the change in vacuum may be what's reseting the EGR so that it runs ok when you take your foot off.
I'm saying this is definately the problem, but its something to check
