So this may not be an exclusively 300zx issue, but I notice that when people lower their cars they get adjustable upper arms. But then they'll dial in negative camber to either tuck or increase grip. I thought the idea was to correct for the natural negative camber that comes from the drop. Could somebody clear this up for me?

The idea behind it is the negative camber gives way better grip. This is a sports car. Correcting negative camber isn't really an option because the car's spec is around -0.9-1.0. Correcting it will push the top of the wheel out too far. You can do it but are you dailying the car 50+ miles a day? I highly doubt it. That's the situation when you'd want your camber to be straight to save tires.

Another reason for arms is to make it even left toright. Having -0.3-0.5 difference L to R will cause a pull. I've got adjustable upper arms and caster bars on my car. My car runs -1.3 camber and 9.5 caster left to right

My car pulls right but I think i've actually got a frame issue because my arms are extended in on one side and far out on the other to make the camber right. My RF wheel sits further back in the wheelwell than the LF too.

So you would basically replace your stock arms so that you can set your amount of camber. If you get a coilover system with camber plates, do you still need adjustable upper arms? I'm looking at the Megan Racing coilovers to replace my springs.

These cars by suspension design the camber plates (if theyre even there on those struts) won't adjust the camber. That's controlled by the upper control arm since you basically have a twin A-arm suspension setup with a knuckle inbetween them. Simple setup but a more complex design of it with a independent strut assy to hold it.
