A "puck" refers to the little piece of clutch disk, sorta like a piece of pie. The greater the number the smoother the clutch generally engages. However the fewer the number the more responsive the engine will be due to the reduced rotating mass. I'd suggest a 6-puck for street usage which is still pretty grippy on clutch release.

A twin plate clutch is actually safer for a transmission than a single plate because the twin plate is slippable because of it's increased friction face doesn't need as grippy of a material to hold the power.

Enjukuracing.com sells Spec clutches for good prices. However I would opt for a cheap Exedy clutch kit if you plan to go SR.

Clutch installation is pretty straightforward and easy. Jack up car, remove driveshaft, remove transmission, pull old clutch off, inspect flywheel for step and or hot spots (resurface as necessary), put new clutch on w/ alignment tool, replace throw-out bearing, replace drivetrain in order you removed it.
While your replacing the clutch it's a good time to replace the rear main seal... which is just a small O-shaped gasket on the back of the engine. It's also really easy to change your transmission fluid as they often go un-changed with 240s and can develope grinds.
