Not sure about the V8, but my first M was an '06 M35 Sport with the wood trim (which I believe was considered an "upgrade" and also included the Bourbon interior (leather only - seats and door/side panel trim), the rest of the interior was like other cars, carpet (black) and headliner (off white). I purchased used back in 2009, coming off a lease. It was definitely a sport model but had the bourbon interior and wood trim. I personally have not seen another SPORT come from the factory w/ the bourbon interior AND aluminum trim. However the bourbon interior was one of the reasons I liked the car as much as I did.
I've since purchased a used 09 M35 sport, black on black. The black leather in my current car is noticeably more supple and softer than the bourbon leather seats I had in my '06. I don't know if that is because of the color difference or because my current car is newer.
