Well I bought a car last year this time hoping to rebuild the motor fully but I procrastinated and the motor is in my garage litterally in pieces. I got my hands on a running motor with 150k on it. It is bare stock no deletes or upgrades have been done. The clutch does look pretty new tho. Anyway my question is I am going to do the deletes before I put my Motor in but is there anything else I should do before? I'm thinking 120k at minimum but if that's off should I do the head gaskets also? I just want to put this motor in and not have to touch it for a while. Also is there a certain hose set I should buy that would cover all the coolant/vacuum hoses I will need to put the motor back? Thanks

I hope you don't take this wrong, but you are a little crossed-up here and we are missing a large chunk of the story with the original motor, which makes advising you difficult.
The issue is that you had a motor that needs rebuilding it seems, but bought a high-mileage engine that you intend to do some recommended rebuilding to, and given the mileage and your goal to not touch it in awhile should basically be a rebuild of the top end at least or more pending a proper compression test and possibly bottom end inspection. The costs of the 120K and hoses and other install/delete/maintenance stuff is close enough to costs for rebuilt shortblock and heads set up, especially considering engine out, that the smart move is to rebuild for a longer term solution.
As for Z parts, Concept Z Performance and Z1 motorsports and Specialty Z are the most common online sources for engine parts, with others better local sources perhaps but unknown to me.
