Pull the head, resurface it, and reinstall with a new headgasket.

...or a shop can do the same for ~8-10hrs labor, assume at least $50/hr.

Option #2: Swap in a used KA motor...maybe $500 for a '97-98 motor, then the swap labor.

You can't.

Find a machine shop in your area and pay them ~$50 to do it for you. It's a standard job for them, easy.

/agree

But can you trust that your headgasket really is bad? How did you find this out again?

I can't think of any reason a bad head gasket could kill a water pump, though I certainly don't know everything.

From what we see here on the forums, shops are frequently off in their diagnosis... sometimes just dead wrong. Of course only you can determine for certain whether they are trustworthy. All I intended to do was warn you that a shop should only be taken for it's word if you have very good reason. You might ask them exactly how they determined it was bad.
