Which brand of tires are best for the occasional track use? I'm looking for something that is all season.

I really don't care about style, I am perfectly happy with the stock rims. Do the rim diameters factor into the performance? If so, what size is the optimal ones?

What is the best ratio? I read that the lower the ratio, the better it is. I am assuming this would have a big impact on the ride as well?

I love my Continental Extremes DWS'. They make an all-season version as well.

As for your question on diameter, it really does not make much of a difference as long as the tire is sized correctly. The weight of the rim also makes a difference in performance.

Another thing to consider is the car has a VDC system that's designed to work with a specific diameter (rim/tire). If you change that beyond 5% of OEM, you have to modify the ECU. (I believe you can do this in newer model G35's or G37s from the display interface.) A custom tune is another way.

+1 on the Continental DWS....but, realize you are getting a 540 A A rated tire so you won't have as much traction as the factory tires.
