You're getting your crank ground. You can try using grades, but chances are you should have them size it. If the bearings are too tight that you choose based on grade, you'll break something or spin a bearing, or if they're too loose, you'll get more piston rattle and have a motor with a short life. Have them size the bearings and also the line bore for the block, and check over the diameters of the large part of the rods.
If your crank shop is going to do what my crank shop did, they're going to make all the journals the same size, so the grade system will no longer apply to you unless you mic em all out and measure the line bore and then choose a bearing. Again, unless you've got access to a good set of 1-2" micrometers (inside and outside) I would not recommend this.
