We have an online service manual available here in the "everything you need to know...Z32" sticky at the top of the page, a great place for a lot of important info.
For your free fish for the day as a new member, I took a quick look at the AT section, specifications, and it holds 7 1/4 quarts (8.3 imperial liters).

There is a trans empty like new number and a drain pan number. Commonly pans only drain what is local there in the pan and do not drain the converters which can have half the fluid left in them. Older cars in the '60s and '70s had drain plugs in the converters but no longer as the car company wanted to save that last dollar for the plug to give to the CEOs.
