With Auto, the climate control is on with the benefit of having the air conditioner on. Gas mileage will suffer due to the air conditioner being on.
With Econ, the climate control is still on, but without the benefit of the air conditioner. Obviously, if the temp outside is 90 degrees and you set the temp to 65, climate control will not work successfully, you'll just have a lot of hot air blown your way.
The reason auto is switched on with defrost is the defroster requires the air conditioner to turn on. This is true of most cars.
You can turn off the climate control and use manual. With manual you control the fan speeds and, I believe, there is no attempt by the car to regulate the temperature.
If you want to optimize your gas mileage, you'll want to drive with econ on, which I generally do with lower and mild temperatures (unless I'm using the defroster, of course). Once the outside temp gets over 80 degress I'm usually using auto.
You'll have to balance your desire for comfort vs gas mileage according to personal preference.
