Cars have been doing that for quite literally 50 years.
The a/c on with heater dehumidifies the air to prevent fogging up the glass.........it should go back off with defrost off but Nissans can be funny about that part.
If you cycle the a/c button to off and then pay careful attention, you can find the a/c still working even though the light is off and even sometimes with say panel vents blowing heat with defrost off. Why at some point I will add an a/c light simply for the clutch cycling, it also tells you when to add refrigerant. Done to all 3 of my Fords and very helpful.
