Try this sometime...

Get a bunch of jalapeños. Cut them in half and take all the seeds out. Fill the peppers with cream cheese, and wrap each half with a slice of bacon. Put them on a cookie sheet and stick them in the over (for Im not sure how long, or how hot...my bad, that kinda ruined the whole recipe lol).

Since you take the seeds out they aren't that spicy, but every once in a while you get one that makes you sweat.

Only thing is, it's hard to make just right at home....

Anyone know of some good recipes that turn out really well?

List specific ingredients to help get that "homestyle thai" flavour if you know of them.
Lol I can make you sooooooo jealous. My mom's Thai =p I love her cooking, and she's coming to visit me in a couple weeks so more food for meeeee. I would have to ask her... But she's the type of person who never uses any recipes or anything, she just throws stuff in and it ALWAYS comes out good.

IMO, if you want really nuclear spicy stuff, nothing beats good Indonesian.

Rendang FTW!

Anyway, for any Thai curry, just grab some curry paste (whatever type), some coconut milk, and then whatever else you want to add to it. You can find proportions online, but everyone seems to prefer something different.

I like Massaman or red curry the best. Massaman is great with chunks of preserved pineapple, pine nuts, and duck.

Do you eat a lot of Indian? Roganjosh is my favorite, with lamb or goat or some other really lean red meat (venison is GREAT).

I tend not to use a lot of chicken or beef in curries. I love 'em both, but they have milder flavors that seem to get overridden by a strong curry. Strong gamey stuff is best, IMO.

oh god do i love spicy food. Not a fan of curry based stuff but peppers, horseradish, wasabi stuff.

One of the Spiciest things i've EVER had.... Red Savina hot sauce. it's a certain breed of habanero that's EXTREMELY hot, granted there are hotter things, but not very many.http://www.redsavina.com is the site to get the stuff from.I like this stuff just for the straight mouth/lung/face/scalp burning that goes on.

if you want good spicy flavor Pain Is good makes some amazing sauces. A friend of mine recently got me some of their Garlic hot sauce, habanero + garlic = heaven. very sweet flavor with a nice bite to it.http://www.painisgood.com seriously, check them out. Wonderful stuff!
