I'm planning on installing electric fans this weekend and I was wondering if I can install a coolant temperature sensor in the gooseneck and wire it into a relay rather than buying a kit?

Alot of people plumb them into the pipes if thats what your after. It's easy, all you need is the sensor, a peice of pipe w/ bung, wiring, and two additional hose clamps.

I was gonna just drill and tap a hole in the existing pipe..........same thing I guess. What type of coolant temperature sensor is best to use?

I got a limit swich from a local a/c and refrigeration supply store, but had to work a transformer to 24 volts... I would love to know if there is a better (more reliable) option.
