I have two 10w3's wired at either 2 ohm or a 1ohm load at the amp, whichever i choose. I am looking at either a jl 500/1 or a concept 800 to run them. I don't know which one would be better suited?

The 500/1 is probably better suited, as 800 would be seemingly overkill in some regards.

If you like the JL's, you also ought to look at Rockford Fosgate amps.
