The change to the modern negative ground alternator is common and easy.
You will need a small modern one wire output ( built in regulator) alternator. Sorry, but no specific recommendations.
The cheap GM alternator is too big. Can interfere with the battery tray.
Need a new mounting bracket and slotted adjusting arm.
The alternator has to mount close to the motor to provide room for fan belt adjustment.
All the old generator/ voltage regulator wires can be unhooked and left.
Just run the alternator output to the battery plus post.
There will be an "exciter" output on the alternator that you can connect to the gauge charging light lead.
Change the battery to ground from the negative post and start from the positive post.
Everything electrical will work OK without change BUT the radio. Some older radios have a POS/NEG round selector.
