What type of refrigerant can I use to charge the system on a car that has sat for years?

Depends what it has in it now.

The proper way is to have it vacuumed down, then replace with whatever refrigerant is in it. The ports will tell you if it's R12 or R134, there's plenty of pics online of the difference.
