When I start my 2003 350z, I smell a lot of gas vapor. Should I adjust the air-fuel mixture to less fuel? Is this an easy job that I could do myself?

You should find the root cause of the problem before you start attempting to fix anything. Beyond not addressing the correct issue, you could potentially make matters worse.

Additionally, there's no way to adjust the AFR unless you're pretty adept with rewriting the fuel maps in the ECU.

Do you have a check engine light? If not, there's technically nothing wrong with the car... unless you have a damaged fuel line (unlikely).
