Any good transmission shop should know all about this. If they don't know what you are asking, go somewhere else.
Are you doing the rebuild yourself? If you are, you should know about this before you start. Call your parts supplier.
Basically, the spacers at either end of the clutch pack and/or the clutch basket snap rings, are swapped for ones that are thinner, so that another friction plate can be added, along with another steel plate. This gives the clutch pack more torque capacity at the expense of slightly faster wear and slightly harsher engagement.
Cross hatching just means sanding the friction surface of each steel plate to make the clutch grip harder. Normally they are smooth. This is also a common modification for autoboxes and a good transmission guy will have his own preferred way of doing it. Same tradeoffs as above -- more wear and more harsh engagement.
Both mods are pretty standard for high-quality performance rebuilds. Make sure they use good clutch plates (not cheap imported crap) and do valve body mods at the same time.
Again, find a transmission guy you can trust, and who knows this stuff without you bringing it up.
