As I've been putting my engine back together, the other day I noticed that the plastic covering the accelerator cable snapped at the firewall (the cable itself is fine...it's just the plastic covering it that broke). So do I need to buy a whole new cable, or is that plastic covering just something that I could try to zip tie or tape to hold it in place? Here's a pic of what I'm talking about:

Dave, not sure if you've gotten it figured yet, but I reckon a repair should not be a problem as long as the total length of the plastic cable cover is not compromised. JB weld and careful application would help.

On the other hand, I don't think it matters or needs repair as long as the plastic sheath and the connection at the throttle (is it a crimp?) is intact. The gas pedal pulls the inner steel braid and the throttle plate is opened when the steel cable slides into the outer guide tube at the throttle body/intake.
Bolt everything up and try to apply the throttle. You should see that broken point jump to where it is supposed to be.

*I can't find any pictures from my previous trucks, but I think that point was broken on one of mine as well.

Once again, thank you Ed! :) Funny because last night at the store, I saw some JB Weld plastic bonder, and went ahead and bought it thinking it might just do the trick to hold that plastic cover in place. I haven't gotten the upper intake plenum installed yet so I can't bolt it up, but once I do then I'll do as you suggested. Thanks again man!!
