you shouldn't be seeing any white smoke. white smoke usually means burning antifreeze (steam), which is usually characteristic of a bad head gasket, but if this was the case you would see this smoke more consistently rather than taking off after idle.
what you're describing seems like a valve seal issue. as you sit, oil accumulates around the valve seals and when you take off (higher rpm) more of that oil leaks into the cylinders causing smoke as you take off.
if you can, go out and buy a $30 compression tester that screws into the spark plug holes and test compression in each cylinder. they should be within ~10-15% of each other. if they are less than 140psi, there might be an issue with your piston rings/head gasket/valve seals. to find out if it's your rings or not, drop a little bit of oil in each cylinder (sealing the cylinder rings a little better). check the compression again and if the numbers are significantly higher, then your piston rings are to blame. if they don't really change too much, then the best bet is stem seals or head gasket.
