It doesn't matter if you set it to 65 or 80, but it does have to be on Auto. If the interior temp is warmer than the desired temp, the system will activate the A/C system.
In your case, it sounds like whatever system sends the signal to the electromagnetic clutch on the A/C compressor failed. The guy used a switch to turn it on as a workaround. I did the same thing on an old Corsica because I didn't want to spend several hours and a bunch of money replacing the pressure switches in an 18 year old car with 170k miles.
As far as why it isn't working, that's another story. You could be low on refrigerant, you could have a vacuum leak that is letting the flapper door inside close, or you could have a sensor that fails and closes the solenoids that allow refrigerant to flow through the system.
One thing that will help you know if you are just low is to pay attention to whether or not it works better when you are driving versus idling. Recharging is pretty easy in the newer vehicles with the R-134a refrigerant since the environmental concerns are not as drastic as the R-12. You can usually buy the pressure gauges complete with instructions at Harbor Freight cheaper than anywhere else. You can buy the refrigerant and most auto parts stores. If you really want to be cheap, Wal-mart sells an R-134a recharge kit complete with gauge. There's a crap load of stuff at JCWhitney, too.
