Just use a paper clip or a little piece of wire, it's not going to shock you (just don't let said paper clip ground against the frame of the car).
BTW, you should be able to charge the system enough with the compressor off so you don't have to bypass the low pressure switch. If you can get the refrigerant can to 100°F you should be able to get the system pressure up to about 125 PSI, which should be plenty to not allow the low pressure safety to trip. If you have a good vacuum on the system I'd say you should be able to get at least half the charge in the system.. Get the cans of refrigerant nice and warm (dunk them in as hot of water as you can get) and that will help force more refrigerant into the system.
