Anyone know how to change the climate control back to fahrenheit mode?

Get on eBay and swap your Climate module for a US spec one. Assuming your car is a US spec model, someone prior to you must have swapped out your US one for a Canadian or JDM one at some point. They're not switchable. Two different part numbers, but functionally identical...one reads Celsius and one reads Fahrenheit.

There is nothing in the FSM about switching it up.
