once it dies, is it hard to restart ? any smell or symptoms of over rich ? if so, I remember someone having the same kind of issues and the culprit was the coolant temp sensor. It was reporting the equivalent of -120 (IIRC), and was starting fine when it was cold, but was running horribly when hot. Obviously, the computer was still trying to mix fuel and air based on the fact that the truck was very cold, and therefore the mix was way too rich for a warmed up truck...
If you have an obd2 software and plug, you could monitor this, but if not you will need to diagnose the good old way with a voltmeter. I will try to find you the location and troubleshooting procedure in the fsm...
