I have a 96 Infinity I30 that I have been told needs new motor mounts. How hard is this to do myself and is there a step by step process schematic?

They're not bad. You'll need a floor jack to support the motor while you do the work. The mounts are fairly easy to access so it can be done in the driveway. Be careful not to dent your oil pan when lifting the motor.

Here's a picture of the mounts. You'll only be replacing the lowermost piece that rests on the crossmember and contains the rubber damper/bushings. They're pretty easy to remove; just the 3 bolts each. If you want even more detailed pictures and instructions, the Chilton manual covering third and 4th gen Maximas is worth picking up.
