Have a 95 J30 that has some of the coldest A/C I've ever felt, but when the air is on and I get on it, say pulling out into traffic, accellerating to pass someone or whatever, the air smells similar to exhaust fumes. This also happens on the interstate running around 75+. Seems to happen around 2800-3000+ RPMs. Any ideas what could be causing this? Like I said, the A?C still blows very cold, and got me stumped as to why it smells.

Exhaust leak at the passenger-side head-manifold?

I've thought about an exhaust leak, but how does it end up in the car and I only smell it at higher RPMs? And if that's the case, how would I check/fix it?

I guess I'd check for exhaust leaks... My guess is that at higher RPMs you're putting out more exhaust (more combustion goin' on) so that's when you notice it.

The intake for your A/C is on the passenger side cowl vent...

More exhaust and more pressure at higher RPMs. I think there are exhaust "sniffers" out there, and maybe your local shop has one. Maybe a visual inspection with a mirror will reveal a cracked manifold gasket or pipe.

I've seen this happen before, definitely an exhuast leak. A fella brought his J to the shop with the same problem. Turns he turned onto an uphill street without slowing and the car smacked the ground.

If this is the case, I'm confident any competent muffler shop can track down the leak and repair it.
