Just a little backstory, I'm just about done with my turbo built bottom end LQ4 build. It'll probably end up being around 750ish whp on it's beginning tunes, so I'm going to need to figure out the tire situation soon. It looks like we can fit 275's in the rear with just a fender roll? I'll be getting the Twin Z wide body in a couple months to add more space in the rear for much wider tire, but for now, need to get as much grip as possible with just a fender roll.

What size wheel and tire should I go for maximum grip?

15x10 drag star wheels
275/50/15

17x9 OR 17x10 Enkei RPF1
275/40/17

Would these sizes fit in a fender rolled rear? Not sure where to go from here.

Check out RimTuck.com I believe 295 is the widest you can go on a stock body Z32 with NA rear.

Agreed, I run 275's easily on 18X8.5's, slightly less than flush at rear opening and no chance to hit HICAS or RUCA on inside...+21 offset I think? I think that Z-Owned ran 295 or even 300's with his 10" rears with just a very minor pull he did easily and looked great. Rear is the easier end really, the front can be testy with the fenderliners and FUCA when lowered excessively but that doesn't sound like where you are going so you should be fine.
