It's a bit high. The shop I've gone to in the past when I didn't want to install the tir rods on my car, charged $60/hr. It took 2 guys and hour to put my parts on and give me an alignment. My bill was $165, $45 alignment and 2 work hours.
Changing the rear diff on my "Toy" 240sx took ~6 hours by myself and I'd never done it before. Rent/borrow some tools and do it yourself. It's not a difficult job to do and there are a number of write-ups out there to help you.
$750 by $75/hr is 10 work hours. 5 hours for 2 guys to change a diff and it's guts is a bit much considering they have all the air tools to get it off/on fast and I did it all by hand.
