They work, but the 300z rotors are only 11" in diameter. Your best bet is to run the R33 brakes. They use a 11.65" rotor with the 4 piston caliper. The 03-04 sedans/coupes front brake rotors are only 11.65" with single piston caliper. This would be an upgrade. The R33 rotors are hard to find, but you can just use the 97-01 Q45 rotor. It is 11.65" and it is only 2mm smaller in thickness than the R33. You will need to use a 1 or 2mm washer between the caliper and spindle to align the caliper over the rotor correctly. I have test fitted the R33 and this is how I know they work. The only other issue is the bolts that mount the brakes to the spindle on the g35 are 14mm bolts, the bolts for the z & r33 are 12mm, so there is some slop when you put the bolt through spindle. So you have two options, A. fabricate a shim to fit inside the spindle so make the whole smaller or B. use a "stripper bolt". Just google for it and you will see what they are. The z32/r33 brakes will not fit on the rear. Only one bolt whole will line up on the spindle and the other whole is off by 1/8".
