I'd recommend finding a complete dash, even if it's in bad condition. If it's already stripped to the metal, you;re going to have a rough time making a dash cap work with it.
Most folks are glad to get rid of an old shagged 280Z dash, so you shouldn't have too much trouble there. Once you have it, as evildky said, you'll want to grind down any areas where it's curled up, or "taller" than the original contours.
After that, the cap is an easy install: Set the dash on some jackstands or sawhorses, clean it well, apply adhesive, apply the dash cap, and wrap the whole thing in a BUNCH of bungie cords. Set it out in a warm location for a day or two, and you're ready to install it in the car. I've done a couple this way, and they look great.
