Okay, after a countless number of google searches, I can't find any documentation for whether or not the 2011 Rogue has bluetooth streaming audio for music (or a hack that will let me use something other than the iPod via USB).

What other work arounds have people come up with to get the likes of Spotify, Pandora, etc. to go through the car speakers?

I'm not familiar with the SV, but mine is SV w SL package and I have a 35mm Auxiliary jack on my center console, I just needed a male to male jack and I can select AUX on my stock radio and play whatever is playing on my iPhone.

he's talking about Bluetooth streaming, not using an AUX jack and the headphone port.

If you insist on bluetooth, just get a bluetooth receiver. Plug it in the aux and charger and leave it in the center storage box. They usually sell for $20-50.

If you haven't found anything about using the Bluetooth as Audio Streaming in the owners manual, then I doubt the radio has that function. And if you don't want to use the AUX to stream music through your phone because of the cable hanging, you can try getting an aftermarket unit like the Pioneer AVH-P4400BH which it has the function that you are looking for...
