See attached where this piece is broken and I want to replace it.
I think it might be 11350-EL00A Rod Assy-Torque but not sure of the part number I need to order.
It looks like something I can replace myself - the engine won't fall out if I start to undo things will it?
What is the purpose of a Rod Assy-Torque? I don't get the rubber bumper thing on the end.

What is the part number I should order?
Are third party parts okay to use like Amazon ($24.99 USD), RockAuto etc. or should I stick to OEM (looks like $98.49 USD)?
What are the torque specs for the bolts - I have a few torque wrenches.
Where can I read to be sure of torque specs?

Yep, that's the Torque Rod (colloquially the dog bone). Provided your nose and transmission mounts are both healthy, just put some support under the engine while changing it (I usually use a floor jack and 2x4 under the pan). Have a long prybar and a lineup punch handy to position the engine for reinstalling the fasteners.

So I would need to support the engine, right?

Yes, but only so you can get it lined back up again after replacement. There are no worries about the engine going anyplace if the nose and transmission mounts are healthy.

That looks like the right number, but it supersedes to an EL00C. Either part number will work. There's nothing wrong with eBay or Amazon parts in this instance. They may be lower quality, but with an engine mount, that just means you may replace it again sooner.

It's a harmonic weight, it helps absorb vibration. That's one purpose of a torque rod, but the main one is to absorb "twisting" motion of the engine.

Nissan puts almost all of their torque specs into the exploded drawings. In this case, both bolts for your dog bone are 103 lbs/ft. See EM-195 here:
