Just wanted to follow-up on what I found and what I did so that hopefully it might inform others in the same situation.
I went by the dealer and as expected, the Journey Coupe seats are much wider inbetween the bolsters that the Sport seats. Very comfortable for me. I checked with the Infiniti parts dept and found that each component of the seat is sold separate. All totaled, a new Journey seat would be close to $5,000 at the dealer. I had very little luck locating an Infiniti seat at a salvage yard. Zero luck in the correct color. I then went to several upholstery shops to get their advise and opinions on what to do. I really didn't know what to expect under the cover of the seat back and had a wide array of ideas from the different shops on what was there.
I settled on a shop in Chatsworth and made an appointment for this morning. It was a great shop and welcomed me to stay, brainstorm some ideas once the cover was removed and to test out the fixes along the way. Very professional and clean. They loosened the seat from the floor to gain access to all the clips that they needed to get to in order to partially remove the cover from the seat back. High enough to expose the air bladders for the bolsters.
Once exposed, we found there to be metal rods that hold the air bladders in place and provide support for the bolsters. I had heard of metal rods being used in seat bottom bolsters from other posts I had searched on this site, but hadn't seen much on the seat back bolsters. Once the foam was folded forward on the inside bolster of the Driver's seat, we were able to bend the metal rod to the outside of the seat back (toward the center console) about 1/2 to 3/4 of an inch. It was that very rod that had been poking me. We talked about doing the same to the outside bolster but decided to leave it alone for now as it wasn't really bothering me much and it was going to me a more detailed process working around the side air bag. $75 later, my back is a happy camper...

The seat looks no different than it did before. The only thing is that the side of the seat near the bolster is a little closer to the center console.
