For the most part 180-200 is normal engine operating temp for cars I've seen. On the 240s the stock fan doesn't even cut on til 212 degs or so. So you are fine.

The cable is detachable at the ScanGauge II and can be connected on the back or side of the unit. Once connected to your vehicles OBDII port, the ScanGaugeII automatically negotiates communications with your cars computer - It's that easy!

Thanks for the temperature spread. On getting an OEM - I don't believe the Versa has a true temperature gauge (not to mention I don't want to run all that stuff to install one. And as far as the numbers on the coolant go, that's very normal. most automotive thermostats will open at 190 degrees or 200 degrees. In fact, you can tweak your cooling system a little bit by replacing your thermostat with one that opens at a specific temperature... although on most vehicles I suggest just buying an OEM thermostat, since they're the best match and tend also to have the best gaskets.
