Assuming you are replacing halogens, then folks over here tend to favor Sylvania Silverstars ... a very white light and pretty bright. I forget the exact bulb that is needed, but can look it up if you want! The Silverstars are not xenon, but still very nice!

Hmmm ... the above bolt pattern is wrong for a Nissan Infiniti (standard is 5 x 114.3mm) and the hub is certainly larger than the Nissan/Infiniti standard of 66.06m.
Changing the bolt pattern is a major endeavor and probably not worth the effort. You will need to find a better fit wheel with the right bolt pattern.
For the bore, you could live with the larger bore (since it will not have a problem going on the smaller 66.06mm hub that Nissan uses). But it will put a bit more stress on the lugs - no support in the center! Aligning and torqueing the lug nuts properly (to 85 ft-lbs) and keeping it torqued to the correct value will be essential.
What offset wheels are you looking at? Remember that the current-gen M has very high offset (47 and 50mm) for its 19x8 wheels, and you should get into the right range for wide wheels like what you are considering - too easy to it suspension pars or rub the fender. It would be good to find a friendly wheel/tire place and do a careful fitment test! Or call Tire Rack and ask for an expert who can confirm whether a given wheel size and offset will fit your car.
Finally, please do keep in mind that the correct load index tire in a 21" size is going to be limited in selection, as well as quite expensive! A load index of 94 or 95 (or higher) is important for these cars.
