can anybody tell me how to change the factory stero to an aftermarket one and how difficult its going to be to do it and is it possible to keep the hand controls for the aftermarket stero

Everytime I have purchased/installed an aftermarket headunit I always had the same place take care of everything. Didn't have to deal with dash kits or any of that. Its 100% possible to keep the hand controls for the aftermarket stereo. I believe there is an adaptor (may be wrong) that you use with your aftermarket headunit. Judging from your post you probably don't have much experience in installing stereos like myself. My advice is go to a local car audio place and work out a deal with them.
