2005+ oxygen sensors

I have read in a couple of places that the O2 sensors on 05 and later models are wideband. Is this true? Could a guy hook up a monitoring unit or gauge to it to get a better feel for what AFRs the motor is running at and have it be accurate vs the stoich/not-stoich O2 sensors? Any input would be helpful.
