Our 2003 G35 coupe needs new tires. The factory OEM was 225/50R17 on the front and 235/50R17 on the rear.

If I go back with stock sizes then I cannot rotate the tires; which cuts the life expectancy of our new tires by nearly 1/2.

Is there a single tire size I can use on both the front and rear that will not greatly affect the computer and/or performance of the car?

Problem is that the rims are wider in the back, so you could get the same size, but you would have to pull the tires off the rim when you rotate to keep the smaller rims up front.

However, I'm not 100% sure if the non-sport rims (17s) are staggered. Can someone verify?

If the rims are the same width, then just run whatever tire looks better to you...the difference between 225/50 and 235/50 on 17's is pretty small.
