I had that issue surface in extreme cold on a Z car a long time ago due to a bad IACV. While the temperature is different for the following thread post, I would try to clean and test the IACV then clean the MAF as my first area to check. IIRC the VQ30DE on the 2000 is the same engine in the 4th GEN with the most similarity to the 1999 model 4th gen.
I keep a spare MAF and IACV (cleaned and tested) that I have picked up from a local salvage yard on hand for when an issue surfaces with stalling at idle or stoplights. I've been able to pick up good working MAFs and IACVs for $30 each from wrecked salvage cars. Where are you located? I've found the IACV to be easy to clean and restore.
