I want to go to a 16" wheel since I have a set of Firestone Destination A/T's 235/70R 16's that are almost new.
These are the wheels here that I am looking at,And the wheels were on a 2003 GMC Yukon.

Here's where I get confused.I checked at https://www.wheel-size.com/
The Offset is what I am concerned about.I used Wheel Offset Calculator,But I don't understand the results.

Current Wheel Specs
Width 7 inches
Offset 30mm

New Wheel Specs
Width 7 inches
Offset 31mm

Results;
Inner Clearance:
1mm LESS
(the inside of the wheel to the strut housing)

Outer Position:
RETRACT by 1mm
(position of the outside edge of the wheel)

The quick answer: 1mm makes no difference. The wheels you looked at are fine.

Offset is where the mounting pad of the wheel sits relative to the outer lip of the rim. Think of a FWD car as having high + offset, and an old lowrider as having negative offset.

Nope. 1mm more "sunken." 1mm is the thickness of a dime.
