How do I go about taking the axle apart to replace the CV Boot?

You'd be better off replacing the entire half shaft. It's cheaper and less of a headache.

If you already have the axle out of the car all you have to do is cut the old boot off. Then take a hammer and knock the outer joint off the shaft. It is only held on with a snap ring. Make sure you clean the joint out. Put the new boot on and knock the joint back on. You need to be careful when knocking the joint back on. If you hit the end with a hammer you can spread it causing the joint to no longer fit into the hub. I use a urethane hammer. MaximA32 is right. If you have never done this, you will save yourself a headache if you just find a cheap aftermarket axle.
