I know you just replaced your head gasket but have you done a compression check? A leak in the head gasket can cause the coolant to get air and cause over heating. Did you resurface the head before you put a new head gasket on? Too much timing advance can also cause it to run hot. Does it only over heat on the street or does it also do it on the highway. If it only does it on the street your clutch fan might be on its way out.

Try and borrow someone else's clutch fan and see if it makes a difference. I'm not totally sure how you would go about testing your own just know that if it overheats on the street and not on the highway that usually means the radiator is not getting enough air.

Only other things I can think of are either there is air in the system, bad cap ,or bad water pump. Changing the cap and coolant is cheapest.
