Hopefully I can help you out with a couple things...
No, you cannot remove the MAF. It tells the ECU how much air is coming into the engine so it can give you the right amount of fuel, pretty critical.
You can remove the AC, I think all there is to it is taking the belt off the pulley and you don't have to, but you can just rip all the components out of there.
My odometer doesn't work either (when my HUD is not working.) Now that it is getting warm it is usually on all the time, but when the car is cold and the speedo/dash lights do not come on, the odometer doesn't turn.
For exhaust, there are a lot of different, good systems, just depends on what you prefer. BRM and Apexi N1 are two really popular choices. A lot of people (like me) just get 2.25-3in. pipe and a good muffler. I have 2.25" going to a Tanabe muffler I got off Ebay, sounds real nice and only cost like $150 for everything. 3" seems to be popular...it is LOUD but someone said they got a 16hp gain from it.
There are a few companies that make HICAS eliminators, search around and you will find them, I know I have seen different threads floating around about it.
