Sucked shut? as in collapsed? taking the t-stat out will not prevent an overheat, it will just take the engine another couple minutes to reach overheat temps.

If you are driving without a thermostat, the truck is going to overheat. The reason for a thermostat is to allow the coolant to cool down in the radiator before it returns to the engine. I would replace the thermostat, and check the radiator cap to make sure it is not loosing pressure, this can cause overheating. You can also try running the engine (at idle) without the cap and look to see if you observe bubbles in the radiator, if so, this would indicate an internal issue ( cracked head -head gasket - block issue. Take the truck in and have a leak down test done - Simple test and cheap.

Also, make sure you installed the fan facing the proper direction (you'd be surprised how many people screw that up).

How to tell? Start the truck, and see if the fan pulls air through the radiator (drop a handful of shredded paper, grass, talcum powder, whatever in front of the grille and see if it sucks in or blows away from the engine).

Definitely put the thermostat back in, and make sure it's oriented properly.

One last thought - Check the alternator . If the alternator is bad, due to over charging, bad bearing etc. this can cause overheating issues. Check the exhaust system, if it is restricted the engine will over heat.

Make sure you have a good air flow going through the radiator. IF the truck does not have AC, you can take some sort of light, place it in the shroud -fan area. The radiator does not have a thick core so if you look through the grille you should be able to see light. Awhile back I replaced the core support, could not believe the condition of the radiator.
