First off, yes - it should be in color (as long as the SL's monitor is color to begin with?).
Hard to say without seeing your install - yet as always check your instructions and cabling on the new equipment/install. Check your new equipment options/settings. I've never encountered one that output either color or black and white but one never knows. Is the output just the typical "yellow" RCA jack, or possibly you inadvertently utilized a component video out(red/blue/green)??
If the Murano's monitor is working properly for all other operations, it most likely is a result of something wrong on your new equipment/install.If everything is good with the install I would start eliminating items. If at all possible, the best thing to do is plug a different monitor into the RCA jacks that you currently have plugged into the console/Murano. The other would be to try a different video source and plug that into the console/Murano and see how it looks on the Murano's screen. Both will tell you if the problem is on the Murano side or your video output from your headrest monitor etc..
