I don't have an LE but I think it could be related to iPod generation as well. I think Apple changed the video interface between one of the generations to force buyers to use only their cables. It could be entirely unrelated but I know there have been some reviews of users buying aftermarket cables that did not work for showing video through the adapter interface and it seemed to depend on which iPod they happened to own.
From all the interface shots I have seen of the iPod source on the LE it didn't look like it implemented the video functionality which makes sense in a way. Like most auto manufacturers, Nissan seems intent on disabling functionality that could distract a driver while the vehicle is in motion. They may have felt since the video feature is available via the console why bother with the adapter interface. It does make the setup a bit more involved though as LE owners would then need to have 2 cables for their iPods if they wanted video too.
I think the key question here is that when using the iPod interface is it possible to select a video file? Are they even listed or is only music listed? Try manually selecting the video file on the iPod itself. What about when at a full stop in park w/ e-brake up? If only music is available for selection and plays then I think that answers the question.
