Holy mess! That is one clusterF they got you in. First, I'm curious if the rebuild was based off any codes. Was a TCM (transmission control module) swap attempted?
We had a thread here recently where the poster had some transmission issues caused by corroded plugs on the rebuilt unit, so an electrician isn't out of the question. However, if a rebuild comes with the same symptoms I had originally, I'd personally jump to another part of the equation.

Anyway, to the problem at hand, if some things were not working, period, then I'd see if some ground points were missed when the dashboard or its panels were reinstalled. Your stuff being intermittent sounds like rewired/reprogrammed modules. The dim bulbs, would be messed up or shorted wires.
I really don't know what wires they needed to troubleshoot the transmission with from inside the cabin. One bundle of wires splits at the back of the engine to the transmission, so unless I was going for the TCM, I wouldn't deal with the inside.
Yes, there is a wiring diagram. It is in the FSM under the transmission section.
I personally wouldn't go through the trouble though. Since they offered to do the right thing and pay for you to get these extra problems fixed, I'd take the car to an Infiniti dealership and let them work on it.
