First of all, not all aftermarket thermostats have a smaller opening than stock. I am running a Failsafe thermostat which is the same size as stock. It also allows coolant to pass even after the springs crap out because of the reverse housing, something no stock t-stat does. I have also known of many people that simply drill out the jiggle valve or drill a small hole next to the jiggle valve to allow coolant to pass after the t-stat fails. It also makes no sense to pay over $40 for a Nismo t-stat that still has to be replaced every few years anyway.
As far as running lean goes, double check the cam and ignition timing. Too much advance will run you lean causing overheating, improper cam alignment will cause both erratic firing and heating issues as well. Also make sure you have good spark in the correct order.
